
Start first by making some fresh, warm tortillas. Once you start cooking the tortillas, start browning your ground chuck at the same time. To make tortillas, combine 3 cups organic all purpose unbleached flour, 2 teaspoons baking powder with no aluminum, 1 1/2 teaspoons salt, 5 tablespoons room temperature organic butter, and then 1 cup of hot water (don’t use microwave to heat it). (Get in the habit of using your finger or thermometer to get water to about 99 degrees Fahrenheit so as to not kill yeast in future recipes).Using your stand mixer or by hand, mix until it forms a nice ball. If by hand, you may need to knead it on flour surface.
Pro tip: I use a little bit of avocado oil on the edges of bowl that I’m mixing with. It helps bring the dough together nicely.
Cover bowl with damp towel and let rest for 10 minutes. Cut dough into about 8 balls to make them thicker or 12 to make them thinner. Roll out balls onto floured counter 8 inch circles or use a tortilla press! They don’t have to be perfect. A tortilla press will really save you time, it’s on my wish list! Heat skillet over medium high heat. Drizzle avocado oil in pan. Using a brush, drizzle on tortillas as you go. Cook 30-60 seconds until bubbles form and slightly golden. Flip for another 30 seconds.
For years I’ve made my own taco seasoning from my organic seasonings:
1 pound ground chuck from meat market
1 tablespoon chili powder
1-1.5 teaspoons ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste (1 teaspoon pepper and 1/2 teaspoon salt)
About half a cup of water and mix it all together with a simmer

You can always add more seasonings if you need a little more heat to it. This is a pretty basic recipe, but a staple in our home. Serves about 4 adults. For my family of 4 (2 adults and 1 toddler and baby it lasts us about 2 days).
In between stirring meat and flipping tortillas, chop up cilantro, limes, avocado, and shred your own cheese. This is the cheese grater I use, find it here https://amzn.to/3Du9ct8. It’s amazingly fast and very easy to clean. I really like this one. It even suctions to the counter as you go.
Warm up some black beans. I also love to add diced tomatoes and fresh lettuce too. If you need a salsa, try an organic Pico de Gallo.

I usually make 2 cups of rice to have as a side. My husband loves rice and so does my toddler.
I’m all about easy, simple and real ingredients. I don’t need substitutes to make it just like store bought food. I like homemade food, and with that comes a whole different flavor and texture and it’s delicious! Ditch those taco seasoning packets! Make your own. You can even make a bunch ahead of time and store them in empty, clean glass spice jars. Be sure to label as Taco Seasoning. Extra can also make a nice gift!
