Healthy Blueberry Popsicles: Summer’s Natural Treat

One of the best fruits of summer is the blueberry! Endless delicious recipes. I love picking them fresh off the bush in July. This recipe is simple. If you are like me, trying to limit sugar, and lose baby weight, or maintain your weight, the ingredients matter.

Blueberries are filled with antioxidants. Natural fighters for us! I pair these blueberries with Greek yogurt that’s very low in sugar. The best Greek yogurt that I can find is Fage. I get 2%. Both my daughters love smoothies and like these popsicles, too! There’s something special about having a popsicle in July!

They take about 5-7 hours to freeze fully. Once frozen, let them sit out for maybe 5 minutes before enjoying them. It tastes better a little thawed to me. Here’s the few ingredients I use to make about 12-14 popsicles, depending on your popsicle mold size and count. Here’s the recipe I use. If you don’t have enough blueberries, you can always add in strawberries or another fruit. Any fruit frozen with Greek yogurt tastes yummy!

-2 cups blueberries, I use wild local.

-1 organic banana

-1-1 1/2cups Fage Greek yogurt

-1 Tablespoon organic vanilla

-1 Tablespoon lemon juice (optional)

If you want more sweetness, you can add honey or maple syrup as great alternatives to sugar.

Blend the blueberries, banana, vanilla, and lemon juice in a smoothie mixer. Fold in the yogurt so that you get chunks of white yogurt in your popsicle. You can also choose to add the yogurt with blueberries and mix all together, too. What’s wonderful about healthy eating is that you eat what is healthy for you. I’m not too picky. I personally like the softness of the blended blueberries and then the creaminess of the yogurt chunks. It’s delicious! Enjoy!
