Healthy & Easy Blueberry Oatmeal Snack Bars

These yummy snack bars are a favorite in my house! They are so healthy, tasty, soft-baked, and easy to make! AND my kids approve!

What you’ll need for a 9×13 inch pan:

For the crust:

2 cups organic rolled oats

1 teaspoon Ceylon cinnamon

1/4 cup organic maple syrup

1 Tablespoon organic coconut oil

2 organic bananas, mashed

1 Tablespoon organic applesauce

1 teaspoon vanilla extract

1/2 teaspoon sea salt

Add all ingredients into a bowl and mix well. Press into greased pan, or lined with brown parchment paper. Bake for 15 minutes.

For the topping mix together in same bowl:

1 cup organic rolled oats

1/2 cup natural, organic peanut butter

1 cup wild blueberries

4 Tablespoons applesauce (or more if needed)

1 teaspoon Ceylon cinnamon

2 Tablespoons lemon juice (optional)

Press on top of crust and bake at 350°F for 15 minutes. Let cool and cut into snack-sized bars. Store in glass container on the counter, or table, for the kids to snack on! Enjoy!
